"To be hopeful in bad times is not just foolishly romantic. It is based on the fact that human history is a history not only of cruelty but also of compassion, sacrifice, courage, kindness. And if we do act, in however small a way, we don't have to wait for some grand Utopian future. The future is an infinite succession of presents. And to live now as we think human beings should live in defiance of all that is bad around us is itself a marvelous victory." -Howard Zinn

quoteIt doesn’t have to be obvious like adobo, for example. It could be a filling in a pastry bun; I can’t name it but it’s always there. It’s a part of me because it’s something I’ve learned from my parents. So even though it’s French classical cooking, there’s something there that is Filipino. I’ve been in the States for more than 25 years, but in my heart I will always be Filipino.

take my tummy back to Bacolod

Bacolod with C and his folks this weekend was delicious.

Gourmet Suman, from our suki streetside vendor

The Amazingly Scrumptious Chicken Inasal by Bacolod Chicken House, simply and unquestionably the best roasted chicken I’ve ever devoured

Filipino Scallops, much smaller than American ones but just as tasty and definitely more visually appealing

I do not have a picture of the LECHON BACOLOD we had, but yes, it was as good as you can imagine.

I ventured into Paco, Manila yesterday to get some spices from the only Indian grocery store that came up in my google search.  What I discovered is that the area has a big Indian community - and two spice stores!  It amazed me how the Indians there could speak in fluent and accent-less Filipino.  I’ve already cooked Chicken Makhani (Butter Chicken) twice within 24 hours, and I must say that I am enjoying perfecting my recipe, slowly but surely.

Farmers' Market, Araneta Center, Quezon City

“Shopping at Farmers Market is a wonderful experience. The tiled floors are dry and cleaned constantly. Sections are also color-coded. For instance, the meat stores are red; fish, blue; vegetables, green; fruits, yellow and flowers, pink. It ‘s like going to a fresh market in France where everything for sale is of the best quality. For example, if you buy fish here, it’s really the best and cheaper, too. Seafood deliveries take place twice a day, according to the helpful vendors, while the vegetables arrive straight from the province. Another great innovation is the use of pushcarts, which eliminates the use of ecologically hostile plastic bags. By the way, there are also comfort rooms with showers, drainage lines and exhaust blowers (to keep the air smelling fresh).” -Manila Standard Today

This makes me very, very happy. Wee!!!
